Great Chicken Recipe
I made Chicken Arrabiatta for dinner tonight, and I just wanted to share it with you as it is a really tasty, healthy meal. You will need (serves 2):-
2 skinless chicken breasts each sliced into 8 pieces, 1 large onion, 1 large tin cannelini beans, 1-2 tsp hot chilli powder, 2 large tins chopped tomatoes, 1 tbsp olive oil, 2 cloves garlic.
Quickly brown the onions, garlic and chicken in an oven proof pan or dish. Then pour in the chopped tomatoes, chilli powder and beans and stir. Once this has come to the boil, place in an oven with the lid on, 180 degrees for 30-40 minutes. Check after 30 minutes to make sure all the liquid has not been absorbed. If it looks a bit dry add some water or a splash of red wine.
You could serve this with new potatoes or a baked potato if you were feeling hungry. But I love to serve this with just some steamed tender-stem broccoli and a squeeze of lemon juice.
